A delicious Mediterranean recipe for aubergines with minced meat and couscous.

Brush the aubergines with 2 tablespoons of sunflower oil on both sides and grill them in a grill or non-stick pan on both sides until golden brown. Place the slices on kitchen paper and sprinkle with salt and pepper.

Beat the sour cream with the garlic and freshly ground pepper.

Heat the rest of the sunflower oil and fry the onions for 2 minutes. Add the minced meat with paprika, pepper and salt and fry it.

In the meantime, prepare the couscous according to the instructions on the packaging. Then pour the apricots, coriander, olive oil and pine nuts through.

Spoon the couscous into a warm dish. Divide the aubergine slices with the minced meat mixture in the middle. Spoon a sour cream sponge here and there. Serve pita bread.
