Autumn salad with red cabbage
A tasty recipe. The vegetarian side dish contains the following ingredients: leeks (washed and in half rings), walnuts ((60 g), coarsely chopped), red cabbage, extra virgin olive oil, red port, balsamic vinegar (250 ml bottle), mustard (fine), dried rosemary and garlic (pressed).

Put the leek in a colander and pour 2 liters of boiling water over it. Drain.

Roast the nuts in a frying pan without oil or butter in 3 min. Golden brown. Let cool on a plate.

Remove the hard core from the red cabbage and cut the coals into strips that are as thin as possible. Mix with the leek.

Beat a dressing of the oil, port, vinegar, mustard, rosemary and garlic. Season with salt and pepper. Scoop the dressing through the salad and sprinkle with the walnuts.
