Directions

  1. Cut the melon into 4 pieces, remove the seeds with a spoon and scoop or cut the flesh from the skin.
  2. Cut the flesh into pieces of 1 ½ cm. Cut the stalk of the red pepper.
  3. Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the pepper finely.
  4. Cut the fresh mint finely and squeeze out the lemon. Mix in a bowl the melon with the pepper, fresh mint and season with lemon juice and icing sugar.
  5. Cover the dish and store in the refrigerator just before use.
