Watermelon salad with mint, red pepper and lemon juice.

Cut the melon into 4 pieces, remove the seeds with a spoon and scoop or cut the flesh from the skin.

Cut the flesh into pieces of 1 ½ cm. Cut the stalk of the red pepper.

Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the pepper finely.

Cut the fresh mint finely and squeeze out the lemon. Mix in a bowl the melon with the pepper, fresh mint and season with lemon juice and icing sugar.

Cover the dish and store in the refrigerator just before use.
