Halve the avocados and keep one half aside for the garnish. Spoon the pulp from the rest of the avocados into the bowl of a food processor or the cup of a hand blender.

Add the lime juice and mix into a smooth puree. Spoon the avocado puree in a bowl.

In the food processor, mix the frozen coconut milk into a smooth cream. Spoon this through the avocado puree.

Using a ice cream peeler, roll rolls of bread and spread over 4 dishes. Garnish with some slices of avocado and sprinkle with the pistachio nuts. Serve immediately.
