Avocado pancakes
Pancakes made from avocado, lemon, ginger, eggs, coconut oil, hazelnuts and maple syrup.

Clean the lemon and grate the yellow skin. Put the avocado pieces, 1 tsp lemon zest (for 8 portions), the ginger powder, salt and the eggs in a high bowl.

Puree with the hand blender until smooth.

Heat half of the oil in a frying pan with non-stick coating and bake 4 pancakes of approx. 8 cm diameter.

Place on a plate and cover with aluminum foil. Repeat with the rest of the oil and the rest of the batter.

Chop the nuts coarsely. Sprinkle the pancakes with the nuts and drizzle with the maple syrup.
