Chop the onion and press the garlic. Cut the meat into pieces. Heat the oil in the pan and fry the onion until golden brown.

Add the meat and fry it on a high heat brown. Season the meat with the ketoembar, djinten, djahé and the garlic.

Stir in the tomato puree, ketjapmarinadeen vinegar. Pour in so much water that the meat is underneath and bring it to the boil.

Let the meat simmer over low heat for 3-4 hours, then season with salt and pepper.
