Cook the potatoes in the shell in 15 minutes in water with salt until done. In the meantime, finely chop the parsley and chives. Press the garlic.

Stir in the parsley, chives, garlic and salt through the butter. Season with pepper.

Drain the potatoes, allow to cool slightly and cut the larger potatoes in half.

Add the herb butter to the still warm potatoes and scoop.
