Baby salad with beets and pickles salsa


Salad of potato, arugula and bicycles, with a pickles sauce.

Directions

  1. Halve the potatoes and boil them for 10 minutes in water with salt if necessary. Drain in a colander and rinse lukewarm under running water.
  2. Meanwhile, cut the beets into wedges and the sausage into pieces.
  3. Chop the onion and cut the pickle into cubes of 1/2 cm (brunoise). Mix the onion with the pickle, 1 tablespoon of gherkin and the oil to a salsa.
  4. Season with pepper and salt.
  5. Mix the potatoes with the beets, beef sausage and rocket in a bowl and season with salt, pepper and oil. Serve the salsa.
