Let the apricots well in the hot tea. Meanwhile cut the tenderloins (the tender piece on the back) of the chicken fillet and chop or grind them.

Heat the oil and fry the shallot with the thyme and the cinnamon on low setting in about 5 minutes until golden brown.

Slice the apricots and mix them with the fried shallot, the finely chopped chicken filets and the jam. Season with salt and pepper.

Cut the chicken fillets lengthwise to create a cavity. Divide the filling over the four fillets and roll them up tightly in a piece of household foil.

Put the packages in a steamer and steam them for about 20 minutes.

In the meantime, cook the stock and cream at medium height until half of it is over, stir in the jam and season to taste with salt and pepper and a little cinnamon.

Remove the fillets from the foil and cut them into thick slices. Serve them with a spoon of cream sauce and sprinkle the almonds over it.
