Bacon patties with garden pea rucola salad. A fresh, sweet dish thanks to the combination of yogurt, apple, coconut and syrup.

Directions

  1. Cook the garden peas in 4 minutes. Put in a colander and rinse under cold running water.
  2. In the meantime, heat a frying pan without oil or butter and roast the coconut chips in 3 min. On medium heat until golden brown. Let cool on a plate.
  3. Mix the garden peas with the rocket. Sprinkle with the yoghurt dressing and sprinkle with the coconut chips.
  4. Halve the bacon slices in width. Heat again the frying pan without oil or butter and bake the bacon strips in 8 min. Golden brown and done. Turn halfway.
  5. Peel and grate the ginger in the meantime. Mix with the ketchup, barley malt syrup and vinegar.
  6. Pour the remaining fat from the bacon strips. Add the ketchup sauce and warm for 2 minutes. Serve the bacon patties with the sauce and the salad.
