Basic recipe for a smooth omelette of only 3 ingredients.

Break the eggs over a bowl. Stir the eggs with the milk and some pepper and salt with a fork. Beat until everything is just mixed.

Heat the frying pan 30 sec. on medium heat. Add the butter and let it melt. Raise the heat and pour the beaten egg into the pan.

Let 5 sec. solidify.

Always push the cooked egg to the middle of the pan, so that the uncoated egg can still cook.

Do this until all egg is solidified, but still soft. Turn off the heat.

Fold the omelet with a spatula and let it slide on a plate.
