Baked pear and eggplant
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: sesame seeds (100g container), eggplant, olive oil, ground cinnamon, ground cumin seeds, pears ((eg conference), peeled) and lemon (scrubbed).

Roast the sesame seeds for 3 minutes in a frying pan without oil or butter. Let cool on a plate. Cut the aubergine into cubes of 1 cm. Heat the oil in a stir-frying pan the eggplant with the cinnamon and cumin for 6 minutes on a high heat.

Cut the pears into quarters, remove the cores and cut the flesh into cubes. Add to the eggplant and cook for 2 minutes.

Grate the yellow skin of the lemon and squeeze out the fruit. Add the grater and the juice to taste. Mix in the sesame seed. Season with salt and pepper. Tasty with couscous and falafel.
