Baked potato with salsa and salad


A tasty recipe. The vegetarian main course contains the following ingredients: vine tomatoes, red onion (finely chopped), red wine vinegar (or lemon juice), chopped parsley, puff potatoes in the peel (for the microwave), zucchini, olive oil, cabbage lettuce, lemon (squeezed) and old cheese (in cubes).

Directions

  1. Cut the tomatoes into small cubes and mix them into a salsa with the red onion, wine vinegar, parsley and pepper and salt.
  2. Let this stand for at least 10 minutes.
  3. Prepare the puff potatoes according to the instructions on the packaging.
  4. Cut the zucchini in half and then cut lengthwise in 5 to 6 slices.
  5. Brush them thinly with olive oil and bake them nicely brown and cooked in a dry frying pan.
  6. Sprinkle with salt and pepper.
  7. Wash and dry the lettuce, tear the leaves into coarse pieces and mix them with the courgette and lemon juice slices.
  8. Divide the cheese over it.
  9. Serve the potatoes with a generous scoop of salsa and the salad..
