Ingredients
Directions
-
Preheat the oven to 150 ° C. Clean the limes, grate the zest of a lime and squeeze out the lime. Cut the other lime into wedges.
-
Place the salmon on the skin side in an oven dish and drizzle with lime juice. Sprinkle with salt and let it rest for a while.
-
Heat the butter and fry the salmon on the skin for a few minutes. Remove from the pan and put back in the dish with the skin side facing up. Place the dish in the middle of the oven.
-
In the meantime, fry the shallot and 1 teaspoon lime zest in the same pan for about 4 minutes. Extinguish with the wine and cream and bring to the boil.
-
Turn down the heat source and stir the rest of the lime juice and red pepper through the sauce. Warm up and season the sauce with a few drops of fish sauce or salt.
-
After about 20 minutes, check that the salmon is done. Spoon a spoonful of sauce on warm plates and put a piece of salmon on it. Sprinkle with coriander and garnish with wedges of lime. Tasty with rice.
