Directions

  1. Preheat the oven to 150 ° C. Clean the limes, grate the zest of a lime and squeeze out the lime. Cut the other lime into wedges.
  2. Place the salmon on the skin side in an oven dish and drizzle with lime juice. Sprinkle with salt and let it rest for a while.
  3. Heat the butter and fry the salmon on the skin for a few minutes. Remove from the pan and put back in the dish with the skin side facing up. Place the dish in the middle of the oven.
  4. In the meantime, fry the shallot and 1 teaspoon lime zest in the same pan for about 4 minutes. Extinguish with the wine and cream and bring to the boil.
  5. Turn down the heat source and stir the rest of the lime juice and red pepper through the sauce. Warm up and season the sauce with a few drops of fish sauce or salt.
  6. After about 20 minutes, check that the salmon is done. Spoon a spoonful of sauce on warm plates and put a piece of salmon on it. Sprinkle with coriander and garnish with wedges of lime. Tasty with rice.
