Clean the mushrooms with a piece of kitchen paper and cut into quarters. Cut the red pepper (without seed lists) fine.

Chop the shallots and finely chop the garlic.

Heat the oil in a frying pan and fry the shallots for 3 minutes. Add the garlic and red pepper. Bake for 2 minutes.

Add the mushrooms and cook over a high heat for 2 minutes. Pour in the vinegar and wine and, when the water is boiling, turn the heat low.

Put the lid on the pan and simmer for 20 minutes on low heat. Season with the sugar and pepper and salt.

Slice the parsley and sprinkle over the dish. Bon appétit! .
