Cook the potatoes in plenty of water. Drain, cool and peel. Prepare the potatoes with a puree tamper. Mix the mashed potatoes in a bowl with a good pinch of salt and pepper. Add the egg yolks and flour and mix to a soft and dry potato dough. Form a ball from the dough and cut it into thick slices. Roll out each slice into a thick ribbon of about 1.5 cm and cut into pieces of 1.5 cm. Roll the blocks between your hands in shape. Push the top with a fork so that you get a stripe pattern.

Bring a large pot of water with salt to the boil. Spoon the gnocchi in and quickly bring back to the boil. Cook them for about 30 seconds.

The gnocchi are cooked as soon as they come to the top. Immediately scoop them out of the water with a slotted spoon and let them drain briefly.

Place the cooked gnocchi in a bowl and drizzle with olive oil.

Serve directly with a sauce or side dish of your choice.
