Roasted sweet potato from the oven with olive oil and fresh herbs.

Preheat the oven to 200 ° C.

Peel the sweet potatoes and cut them in half lengthwise. Prick the potatoes with a sharp knife all around.

Put them on a baking tray, sprinkle them with oil and sprinkle with (sea) salt.

Put the baking tin in the middle of the oven and roast the potatoes in approx. 40 minutes until tender and brown.

Pick the leaves of basil and parsley stalks and tear large leaves into pieces.

Finely chop the fresh mint. Spoon the herbs with oil in a bowl and salt and pepper to taste.

Place the potatoes side by side on a dish and spoon the herbs on the potatoes.
