Bean salad with chorizo and orange
Peel the oranges thick and cut the segments between the membranes. Collect the juice.
Spoon the orange slices with juice, red beans, chorizo, red onion, red pepper and cumin.
Roast the tortillas in a dry hot frying pan.
Serve the salad sprinkled with coriander and the tortillas torn or cut into pieces. Delicious with guacamole and taco or salsa sauce.
