Bring the water with the meat, the bouillon tablet and the herb bag slowly to a boil. Let the meat be cooked gently in about 1 hour.

Cut the parsley very fine. Sieve the stock over a measuring cup. Measure 200 ml broth (remainder of broth is not used).

Slice the pieces of meat very small. Melt the butter in a pan. Stir in the flour and heat gently for approx. 2 min.

Pour in half of the stock with stirring and keep stirring until a smooth sauce is created.

Stir in for a dash of the rest of the stock. Stir in the meat and parsley.

Leave to simmer for about 2 minutes. Season with pepper, salt and nutmeg.

Put the sauce in a deep plate, let it cool down and let it cool in the fridge for at least 2 hours.

Beat the egg with the water in a deep plate. Sprinkle the breadcrumbs on a flat plate.

Cut the meat mixture into 8 points. Form each portion into a croquette and roll loosely through the breadcrumbs.

Then fry the croquettes one by one through the egg mixture and then roll through the breadcrumbs.

Shake off the excess breadcrumbs. Keep the croquettes covered in the refrigerator until use.

Heat the frying fat to 180 ° C.

Fry 4 croquettes at the same time in approx. 4 min. Crispy brown. Drain on kitchen paper in a colander. Place 2 croquettes on plates.
