Beef finches with potato fritters

Boil the potatoes and drain them. Stamp them with 25 grams of butter to a smooth puree.

Heat half of the remaining butter and fry the beef finches, sprinkled with salt and pepper, golden brown and done.

Mix the flour by the mashed potatoes into a dough bit by bit. Roll this onto a floured worktop to 1/2 cm thick. Cut out circles of 10 cm (use a glass if necessary).

Place grated apple and almond on half of each round. Fold the circles and press the edges together.

Fry the fritters in the rest of the butter in 7-8 minutes until golden brown. Serve the potato fritters with the beef finches.
