Beef steaks with homemade herb butter

Grate the orange zest of the orange. Peel the orange thick and cut the segments between the fleece.

Cut the herbs and the spring onion very finely. In a bowl, mix 100 g of butter with orange zest, basil, parsley, spring onions and some salt and freshly ground pepper. Put this mixture in the piping bag and spray 4 nice bites on a plate. Let the bites in the refrigerator stiffen in 30 minutes.

Meanwhile, let the steaks come out of the package to room temperature. Heat 25 g of butter in a frying pan until the foam pulls away. Bake the steaks in the pan in 4-6 minutes brown and inside rosé. Turn them after 2-3 minutes.

Serve the steaks on hot plates with the garlic butter on top. Garnish with orange slices. Tasty with baked potatoes and snow peas.
