Beet hummus with roasted garlic
Heat 2 tablespoons of oil and fry the garlic in the peel for about 5 minutes at a low setting. Then add the beetroot and honey and let simmer for about 10 minutes.
Allow to cool and remove the soft garlic from the peel.
Then mix the beetroot, puffed garlic, chickpeas, cumin, 2 tablespoons of oil and lemon juice to taste in a food processor until smooth. Season with salt and pepper and sprinkle with the parsley.
Serve the beet hummus with the baguette.
