Beet soup with apple and meatballs

Directions

  1. Chop the onion, cut the beets into cubes. Peel the apples and potato and cut into cubes. Heat some olive oil in a soup pot and gently fry the onion.
  2. Spoon the beetroot and potatoes and half of the apple cubes. Add 1 liter of water with some salt and some freshly ground pepper. Boil the potato and beet lightly for 15 minutes.
  3. In the meantime, heat some olive oil in a frying pan and fry the remaining apple cubes while transferring brown. Put them on a plate and fry the meatballs in the shortening around brown and cooked.
  4. Puree the beet soup with a hand blender. Dilute the soup with some water if necessary and add salt and pepper to taste. Serve the soup and spread the apple cubes and meatballs over it.
