Beat a dressing of wine vinegar, olive oil, mustard and honey.

Cut the beetroot into wafer-thin slices with a sharp knife, cheese slicer or slicer grater.

Place the slices of beet on the plates and sprinkle with the dressing. Divide the arugula over the beet carpaccio.
