Clean the beets and scrape them into thin slices with a peeler or mandolin.

In the meantime, boil the vinegar, 200 ml of water, sugar and ginger for 4 minutes, until the sugar has dissolved. Allow to cool down.

Spoon the beets in a clean weck or jam jar and pour the lukewarm vinegar mixture and the slices of ginger.

Allow to cool, turn the lid on and leave at least 1 night for serving.
