Belgian waffles
Homemade Belgian waffles with vanilla sugar, butter and eggs.

Heat the milk and water in a saucepan until lukewarm.

Mix the flour, yeast and vanilla sugar in a large bowl.

Pour the milk with a whisk while stirring and mix until smooth.

Melt the butter in the saucepan. Turn off the heat when the butter is half melted. The rest melts automatically.

Split the eggs. Add the egg yolks and the salt to the batter.

Mix the melted butter with a whisk.

Beat the egg whites in a fat-free bowl with a mixer with clean whisks in 4-5 min. Stiff. Spatula through the batter.

Cover with a clean tea towel and leave for 45 minutes in a warm place.

Heat the waffle maker. Grease the plates with the oil.

Spoon the bottom plates with a ladle.

Close the iron and fry the 2 waffles in 4 min. Golden brown and done. Bake 10 more waffles.

In the meantime, heat a skillet without oil or butter and toast the almond shavings golden brown.

Serve the waffles with the almond shavings, the custard filling, whipped cream and chocolate sauce.
