Dab the steaks dry and sprinkle around with salt and pepper. Brush with a little oil and sprinkle around with the basil.

Roast the pine nuts golden brown in a dry, hot frying pan. Divide the gorgonzola into 4 equal pieces. Preheat the plates in the oven to 100ºC.

Heat a grill pan and roast the meat alternately on a high setting rosé.

Place the steaks on the hot plates and put a piece of gorgonzola on the meat.

Sprinkle with the rocket and pine nuts and serve immediately.
