Blinis with mushroom caviar
A tasty recipe. The vegetarian starter contains the following ingredients: mix for (poffertjes), milk, egg, oil, mushroom melange (200 g), garlic (finely chopped), shallot (chopped), olive oil with truffle flavor (bottle of a 250 ml), sour cream (125 ml) , fresh chives ((a bag of 25 g) and in pieces of 4 cm).
- 2 cloves garlic finely chopped
- 1 shallot finely chopped
- 1 teaspoon olive oil with truffle flavor bottle of 250 ml
- 1 cup sour cream 125 ml
- Some blades fresh chives (bag of 25 g), in pieces of 4 cm
In a bowl, beat the small pancake mix with the milk and the egg into a smooth batter.
Heat a little oil in a large frying pan.
Pour 3 to 4 small portions of batter into the pan with a ladle.
Bake the pancakes (blinis) for 1 minute per side.
Bake 12 and put them on plates.
Wipe the mushrooms and cut them into slices.
Heat 1 tablespoon of oil in a frying pan and fry the garlic and the shallot for 30 seconds.
Add the mushrooms and fry for 3-4 minutes.
Add salt and pepper to taste.
Grind the mixture coarsely in a food processor or with a hand blender.
Mix in the truffle oil and let the 'mushroom caviar' cool down.
Put the blinis on plates and generously add sour cream.
Divide the mushroom caviar over it and place some sprigs of chives on each blini.
Tasty with red lettuce..
