Cut the onion into wafer-thin rings. Put in a container, add the vinegar and sugar and if necessary season with salt. Let stand for 30 minutes.

Halve the tomatoes and add to the onion mixture.

Remove the leaves from the oregano sprigs and add to the tomato onions mixture together with the olives. Scoop, drizzle with the oil and serve.
