Chop the onion and finely chop the garlic. Heat the oil in a frying pan and gently fry the onion and garlic.

Put the rice, koenjit, ketoembar and djinten through and fry briefly. Cut open the lemongrass stalk and insert into the rice.

Pour the coconut milk with the water by the rice and bring to the boil while stirring. Boil the rice in an open pan over medium heat for about 15 minutes until done.

Remove the pan from the heat, stir in the rice and let dry for a short while without the lid. In the meantime, cut the cucumber into thin slices.

Cut the stalk of the red pepper, cut in half lengthwise and remove the seeds with a sharp knife. Cut the pepper into long thin strips.

Spoon the rice on a serving dish, remove the lemongrass. Garnish with the cucumber and red pepper.
