Boil the potatoes with a pinch of salt and puree them.

Sprinkle the fish generously with salt and drizzle with some lemon juice. Poach the fish in a pan of water for about 10 minutes until it is tender. Drain and pick the fish apart.

Place the cookies on baking paper and let them stiffen for about 1 hour in the freezer.
