Boil the potatoes with a pinch of salt and puree them.

Sprinkle the fish generously with salt and drizzle with some lemon juice. Poach the fish in a pan of water for about 10 minutes until it is tender. Drain and pick the fish apart.

Season the fish with the mashed potatoes, shallot, parsley and red pepper and season to taste with some lemon juice.

Stir in the eggs little by little until the mixture is smooth, but firm enough to form cookies the size of an egg.

Place the cookies on baking paper and let them stiffen for about 1 hour in the freezer.

Heat the oil to 180 ° C and fry the cookies with 4 pieces at a time. Drain and serve hot with a spicy (chili) dipping sauce.
