Mix the cocoa powder, salt and the flour in a bowl.

In a different bowl with a mixer, beat the butter and caster sugar until creamy.

Add the egg and mix through. Mix the cocoa flour mixture with a spatula until a coherent dough is formed.

Wrap the dough in cling film and leave to rest in the refrigerator for 1 hour.

Preheat the oven to 160 ° C.

Sprinkle the worktop with some flour and roll out the dough to a thickness of ½ cm. Put 40 cookies out.

Place them on a griddle covered with parchment paper.

Bake in the oven for approx. 15 minutes and crisp. Allow the cookies to cool on a grid.

In the meantime, mix the coconut oil with the icing sugar and grated coconut before filling. Add 1 or 2 tbs of hot water if it is too dry.

Spoon with two teaspoons on half of the cookies some coconut filling and fill with the rest of the cookies.

Push them gently so that the filling is visible along the edge. Yummy! .
