Heat the oil and fry the onion at medium height in about 5 minutes soft and light brown. Add the curry and fruit for another minute.

Add the rice and pour in enough water that the rice is just under. Add a pinch of salt and let it boil while stirring. Turn the heat source down and let the rice cook for about 15 minutes.

Transfer the rice to a flat dish and let it cool down completely. Season the pepper, pineapple, raisins, coriander and spring onions and season with lime juice and ginger syrup.
