Braised celery with thyme
Preheat the oven to 200ºC. Place the celery in a large oven dish. Pour the olive oil and chicken broth over it, spread the butter over it and sprinkle with the thyme.
Cover the dish with aluminum foil and let the celery in the oven for about 45 minutes.
Remove the foil, scoop some of the cooking liquid over it and continue for about 15 minutes in the oven until the celery is lightly caramelized. Crumble the goat's cheese over it and serve immediately.
