Broccoli salmon dish
Dish with potatoes, broccoli, celeriac and salmon.

Preheat the oven to 200 ° C.

Peel the potatoes and celeriac and cut into equal pieces.

Boil the potatoes and celeriac together in water with salt in 20 min. Until done.

Cut the broccoli into small florets. Slice the garlic. Heat the butter in a frying pan and fry the garlic for 1 min.

Add the broccoli and tarragon to the garlic and cook for 5 minutes on low heat. Stir frequently.

Remove the pan from the heat. Divide the broccoli and salmon over the bottom of the oven dish.

Heat the butter in a saucepan, add the flour and stir until low on the fire until the flower starts to color lightly (roux). This takes 5 min.

Add the milk, bring to the boil and simmer for 5 minutes on low heat. Remove the pan from the heat.

Meanwhile, grate the yellow skin of the lemon and cut the fruit into pieces. Slice ⅔ of the dill, keep the rest aside as a garnish.

Stir in the lemon zest, finely chopped dill, pepper and salt. Pour over the broccoli in the oven dish.

Drain the potato and celeriac. Add the butter, horseradish, milk, pepper and possibly salt and puree with the puree mash.

Divide the puree over the mixture into the baking dish and bake the dish in the middle of the oven for about 20 minutes.
