Broth with tortellini, broad beans and mint


A tasty Italian recipe. The starter contains the following ingredients: poultry, fresh broad beans (unopened), chicken stock, tortellini with cheese filling (already formaggio, bag of 250 g), fresh mint (a 15 g) and lemon juice.

Directions

  1. Popping the beans in the garden (open the pods between hands and let them out with thumb peas).
  2. Using a potato knife make a slice in each garden bean and press green bean from a stiff, gray skin (= 'double tops').
  3. Bring 1 liter of water to a boil in a soup pot.
  4. Top up the bouillon tablets.
  5. Season the tortellini in stock in 10-12 min.
  6. Add broad beans after 5 minutes.
  7. Stir occasionally.
  8. Put mint leaves on top of each other and cut them into wafer-thin strips with a sharp knife.
  9. Broth to taste with lemon juice, salt and possibly pepper.
  10. Soup the soup into four deep plates and sprinkle mint strips over it.
  11. Delicious with crunchy ciabatta bread..
