Brussels sprout stew with apple and goat cheese

Directions

  1. Peel and cut the potatoes into pieces and cook them in a good layer of water in 15-20 minutes.
  2. Chop the onion and wash and halve the sprouts and stir-fry both in 3-4 minutes in a wok with the olive oil.
  3. Add the apple cubes and fry for another minute.
  4. Pour 100 ml of water and smother the sprouts in a further 10 minutes.
  5. Drain the potatoes and crush them.
  6. Pour in the milk and stir the potatoes into a smooth puree.
  7. Spoon the sprout mixture and half of the cheese cubes through it and continue to warm the stew until you start to melt the cheese.
  8. Serve the stew in deep plates and sprinkle the rest of the cheese over it.
