Burrito with beans-vegetable chilli and mole
Mexican recipe for burritos with mango, beans, paprika, red pepper, black beans and mole.

Peel the mango, cut the flesh of the kernel and then into small cubes.

Halve the peppers in the length, remove the seeds and cut the flesh into small cubes.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Slice the flesh finely.

Grate the green skin of the lime and squeeze out the fruit. Slice the coriander.

Mix the mango, paprika, red pepper, coriander and the lime zest and juice into a salsa.

Put the beans in a sieve, rinse under cold running water and let drain.

Heat the oil in a frying pan and fry the stir fry mix on medium heat 2 min.

Add the beans and cook on low heat for 4 minutes. Season with pepper and salt.

In the meantime, heat the tortilla wraps and the mole almendrado according to the instructions on the packaging.

Divide the bean-vegetable mixture with half of the salsa over the middle of the tortilla wraps.

Fold the sides of the tortilla a few centimeters over the filling, roll the bottom of the tortillas over it and roll into a package.

Serve with the mole and the rest of the salsa. Yummy! .
