Caldo verde (kale soup in portuguese)
A tasty recipe. The main course contains the following ingredients: meat, chorizo sausage in one piece, traditional olive oil and fresh kale (or cavolo nero).

Cut the chorizo into pieces. Heat the oil in a frying pan and gently fry the chorizo until they are crispy and brown. Put them on a plate.

Peel the potatoes and cut into cubes. Chop the onion. Fry the onion gently in the same shortening.

Spoon the potato and kale through the onion and pour in the stock. Bring to the boil and cook the soup gently for 15-20 minutes.

Puree the soup with a hand blender until it has a coarse texture. Stir in the chorizo and warm the soup for a moment.

Season spicy with (freshly ground) pepper and salt. Serve the caldo verde in large soup bowls. Delicious with coarse slices of floor bread.
