Calvados chicken with apples and oyster mushrooms
A tasty recipe. The main course contains the following ingredients: poultry, butter, apples ((eg braeburn), unpeeled and diced), calvados (slijter), oyster mushrooms (150 g), Japanese soy sauce, chicken ((very) organic at room temperature), sage (dried) and crème fraîche (125 ml).
Heat 25 g butter and fry the apple for 2 minutes, adding 1 tablespoon at the last.
Heat 25 g butter in a frying pan and brown the oyster mushrooms, season to taste with the soy sauce and (freshly ground) pepper.
Preheat the oven to 200 ° C.
Melt the remaining 25 g butter, season with salt and (freshly ground) pepper and rub the chicken on the inside and outside.
Spoon two-thirds of the apple cubes with the sage and crème fraîche.
Fill the chicken with it and put it in an oven dish or roasting tray.
Sprinkle the rest of the apple and the oyster mushrooms around it.
Fry the chicken in the middle of the oven in an hour and a half until done.
Take the chicken out of the oven and carefully pour the flambé over (see tip).
