Canneloni with spinach and ricotta
Vegetarian pasta dish with cannelloni, vegetarian minced meat, ricotta, spinach and mascarpone in tomato sauce.

Preheat the oven to 180 ºC.

Chop the onion. Heat oil and fruit for 2 minutes on low heat.

Raise the heat and fry the minced meat for 2 minutes. Season with pepper and if necessary. salt.

Heat the oil in a stirring stir fry the spinach over medium heat 3 min.

Drain in a colander and press out the moisture with a spoon. Slice the spinach.

Mix it finely with the spinach and ricotta. Season with pepper, salt and nutmeg.

Fill the cannelloni with the minced spinach mixture. Place side by side in the oven dish.

Mix the mascarpone with the tomato sauce and spread the sauce over the dish.

Fry the cannelloni in approx. 40 minutes until golden brown and cooked in the oven.
