Caramelized radicchio with rosemary
Radicchio caramelized with honey, garlic and rosemary.

Cut each head of radicchio into 8 parts, leave the core. Brush them with the oil.

Slice the garlic finely and finely cut the rosemary. Mix the vinegar, garlic, honey and rosemary together in a small bowl.

Meanwhile, heat the grill pan without oil or butter. Grill half of the radicchio in 4 min. Golden brown. Turn halfway.

Pour half of the dressing over and let it caramelize for 1 minute, while turning the radicchio regularly.

Remove from the pan and place on a plate, keep warm under a lid and clean the pan in between. Grill the 2nd portion.

Slice the parsley. Sprinkle over the dish and serve immediately.
