Carrot stew with red onion


A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: carrots (about 500 g), red onions, crisp potatoes, butter, whole milk (or cooking liquid), coarse mustard and grated spicy cheese (eg grana padano).

Directions

  1. Cut green and ends of carrots and clean roots under running water.
  2. Cut carrots into pieces.
  3. Peel onions and cut into half rings.
  4. Peel potatoes, cut into pieces and boil in salt in 15-20 minutes in little water.
  5. Fry 25 g of butter in frying pan with non-stick coating.
  6. Onion on low heat in 15 min.
  7. Boil the carrots in little water with salt in 10 minutes.
  8. Drain potatoes and roots (pick up some cooking water) and put them together in the largest pan.
  9. Pest potatoes and carrots with milk (or part of cooking liquid) and coarsely grind 25 g butter.
  10. Stir in the mustard and cheese.
  11. Put onions through and possibly add some cooking liquid.
  12. Season with salt and pepper and spread over four warm plates.
  13. Tasty with bratwurst or pork chop..
