Sweet and sour pepper salad


A sweet-and-sour salad of peppers with garlic, red wine vinegar, cane sugar, star anise and parsley.

Directions

  1. Remove the green stalk from the pointed peppers, remove the seeds and cut the flesh into strips. Cut the garlic with a knife.
  2. Put the peppers with the garlic, vinegar, sugar and star anise in a pan. Bring to boil. Turn the heat down and let it simmer for 20 minutes.
  3. Remove the pan from the heat, remove the garlic and star anise and let the pepper strips in the water cool completely.
  4. Slice the parsley and sprinkle over the salad just before serving.
