Slice the leaves of the fresh mint.

Squeeze out the orange and lemon. Stir the sugar through the juice until the sugar is dissolved.

Remove the carrot and grate with the fine side of the grater over a bowl or with the fine grater in the food processor.

Mix the citrus juice and fresh mint through the grated carrot.

Cut the white cheese into cubes and sprinkle over the carrot salad.
