Casserole samosa with coriander mayonnaise

Cook the potatoes until tender and puree them. In the meantime, heat the oil and fry the onion and spices fragrant.

Add the kale and cook for about 5 minutes. Add the mashed potatoes and mix well.

Preheat the oven to 200ºC. Cut the sheets of filo pastry into squares.

Place a piece of dough on the work surface and brush with oil. Place 1 tablespoon filling at the bottom left of the filo pastry and fold the bottom left over the filling to the middle.

Fold everything upwards, then from left to right and then the dots over it. Repeat until dough and filling are on.

Place the samosas on the baking sheet and bake in the oven in about 25 minutes until golden brown. Puree the coriander with the mayonnaise, lime zest and juice.

Serve hot samosas directly with the cilantro mayonnaise or heat them up again in the oven.
