Preheat the oven to 180ºC.

Grind the cauliflower into crumbs in a food processor. Spread the cauliflower crumbs over a baking tray and bake them in the oven for about 20 minutes, stirring occasionally.

Let the cauliflower crumbs cool, scoop them in a clean tea towel and squeeze out all the moisture.

Mix the cauliflower with the Parmesan cheese and the egg. Season with a pinch of salt.

Line the other baking tray with parchment paper and make 2 thin, even bottoms of the mixture. Bake the bottoms in the oven in about 20 minutes until golden brown and crunchy.

In the meantime, mix the sieved tomatoes with the garlic and oregano and season with salt and pepper.

Spoon some tomato sauce onto the pizza bases and top with the anchovies, onion, capers and mozzarella. Fry the pizzas for about 10 minutes until the mozzarella is melted.

Sprinkle with some arugula and serve immediately.
