Cauliflower rice with vegetables, yellow curry and egg


Curry dish with egg, Thai wok vegetable, yellow curry paste, coconut milk and homemade cauliflower rice.

Directions

  1. Boil the eggs hard in 8 minutes. Let scare under cold water, peel and halve in length.
  2. Meanwhile cut the cauliflower into florets and the stalk into pieces.
  3. First grind the pieces of stalk in the food processor until they have the structure of couscous. Scoop out of the food processor.
  4. Also grind the florets until they have the structure of couscous.
  5. Heat the sesame oil in a wok stir fry the wok vegetable 4 min.
  6. Add the curry and coconut milk and heat for 3 minutes.
  7. Meanwhile, heat the oil in a frying pan and stir fry the cauliflower couscous for 4 minutes on medium heat.
  8. If necessary, season with salt. Divide the cauliflower rice, vegetables and eggs over the bowls or deep plates.
