Cauliflower soup with balls


A tasty Dutch recipe. The main course contains the following ingredients: meat, olive oil, leek (in rings), chicken broth (from tablet), cauliflower (in florets), Catalan (sausages (scale 290 g)), wholemeal rusks (crumbled), parsley (chopped) and whipped cream (125 ml).

Directions

  1. Heat the oil in a large soup pot and fry the leek for 5 minutes.
  2. Add the chicken broth and the cauliflower and bring to the boil.
  3. Cook for 15 minutes on low heat until the cauliflower is tender.
  4. Remove the skin from the sausage and knead the sausage meat with the crumbs and 2 tbsp parsley into a smooth whole.
  5. Then make soup balls.
  6. Add the whipped cream and puree the soup in the food processor or with the hand blender.
  7. Season with salt and pepper.
  8. Stir the balls through the soup and simmer for another 3 minutes.
  9. Garnish with the rest of the parsley..
