Celeriac soup with bacon
A tasty Dutch recipe. The side dish contains the following ingredients: meat, onion, garlic and traditional olive oil.

Preheat the oven to 200 ºC.

Peel the celeriac and cut into 3 cm cubes. Cut the onions into pieces.

Put the celeriac in the oven dish with the onion and the garlic. Sprinkle with thyme. Sprinkle with the oil and put in the oven for about 45 minutes.

Add the stock and cream after 20 minutes.

Place the bacon on a baking sheet covered with parchment paper. Bake 12-15 minutes above the vegetables in the oven and drain on kitchen paper.

Remove the dish from the oven and puree the entire contents in the blender. You can also puree the soup in a deep bowl with a hand blender.

Add salt and pepper and serve in bowls. Garnish each bowl with 2 slices of bacon.
